This is a collection of some of my all time favorite easy weeknight dinners. There are Pegan Burgers, an absolutely delicious lasagna that can be made ahead of time and frozen for any weeknight, Chicken Schnitzel, my take on a California Chop Salad with grilled chicken, and Moroccan Spiced Chicken Thighs.
All of these recipes are portioned for 4 servings, so make any of these for yourself + leftovers, for family, or for friends this week or any week of the year!
