This week we'll be making 4 delicious, under 45 minute meals for dinner. While they are meant to be easy enough to have on a weeknight, any of these dishes is equally great to use for a casual dinner party.
This week we'll be making:
- Ahi Tuna and Sushi Rice Poke Bowls (Pescatarian, GF Optional)
- Pesto Shrimp Pasta with Tomatoes & Olives (Pescatarian, GF Optional)
- Panko Chicken with Dijon Balsamic Arugula Salad (Dairy Free Optional, GF Optional)
- Sheet Pan Pesto Pizza with Maitake Mushrooms & Goat Cheese (Vegetarian, GF Optional)
If you're only going to make 2 recipes this week, I'd suggest doing the Panko Chicken & Shrimp Pasta (they have a lot of ingredient overlap) or the Shrimp Pasta and the Pesto Pizza - they both use pesto, so you can make a double batch of pesto once and use it for both recipes.
I've attached a comprehensive shopping list, by section of the grocery store, for the full week of recipes. If you're only making one or two recipes, you can use the "Grocery List" feature on any individual recipe to shop for just the ingredients needed for that one. Each recipe includes notes for swaps or adaptations for dietary restrictions where available.
