This week we'll be making 4 delicious, under 45 minute meals for dinner. While they are meant to be easy enough to have on a weeknight, any of these dishes is equally great if you're having friends or family over for dinner during the week or over the weekend too!

This week we'll be making:

- Dijon Herb Chicken with a Fall Blue Cheese Salad (Gluten Free)

- Honey Soy Salmon & Coconut Milk Rice Bowls (Pescatarian, Dairy Free, GF Optional)

- Orecchiette with Sausage, Mushrooms & Greens (Gluten Free Optional, Dairy Free Optional)

- Sausage Ribollita with Olive Bread & Kale (Gluten Free Optional, Vegetarian Optional, Dairy Free Optional)

If you're only going to make 2 recipes this week, I'd suggest doing the Sausage Ribollita and the Orecchiette with Sausage, Mushroom & Greens as they have a lot of ingredient overlap.

I've attached a comprehensive shopping list, by section of the grocery store, for the full week of recipes. If you're only making one or two recipes, you can use the "Grocery List" feature on any individual recipe to shop for just the ingredients needed for that one. Each recipe includes notes for swaps or adaptations for dietary restrictions where available.
