“Cacciatore,” meaning “hunter” in Italian, is a dish prepared with onions, mushrooms, herbs, peppers, and chicken. A really flavorful and straightforward meal, once known as a peasant-type dish, it is perfect for a family-style preparation. I use chicken thighs here for their flavor, tenderness, and affordability. When braised in this tomato-based sauce, they stay incredibly moist and fall right off the bone. I typically serve over bucatini but potatoes or polenta work great here too!
A great entree for a winter get together- it does take some time to simmer, but I promise it’s worth it!
