This marmalade a great dipping condiment for egg rolls, lumpia, dumplings, or even with some

fried chicken! I put fish sauce as an optional ingredient because if you want a more savory

balanced sauce then I would add the fish sauce or you can sub soy sauce if you don’t like the

flavor of fish sauce. This sauce does come out pretty sweet when it is by itself but when you

pair it with a fried item it is DIVINE! What are you going to eat this with? Tag me

Ingredients

apricots
Pith removed

cup
apple cider juice
1/2
cup
sugar
Granulated, White

thai chili
Red

cloves
garlic
Peeled, Minced
1/4
cup
cane vinegar
Dati Puti Brand
1/2

lime
Juiced
as needed
salt
Kosher

tablespoon
fish sauce
Optional

Directions

Step 1

Add the pitted apricots to a small pot over medium high flame. Also add the apple cider vinegar, sugar, salt, Thai chillies, and garlic.

Step 2

Allow to cook down for 15 minutes while stirring constantly. Blend with a stick blender to achieve desired consistency.

Step 3

Remove with heat and finish with lime juice. Adjust seasoning with fish sauce, salt and more vinegar if desired. Serve at room temperature, chilled or even hot as a glaze for a roasted chicken or duck.
