This hearty grain salad is one of my favorites for a side dish or a perfectly filling lunch. It utilizes gorgeous autumn/winter produce and it’s vibrant colors and flavors make this simple dish so special. Farro is a seriously underrated grain-it has a slightly nutty taste and chewy texture and more importantly is an excellent source of fiber, iron, protein, magnesium and zinc. Healthy, delicious and beautiful- you need this one in your New Year recipe repertoire!
