Start off by cooking your chicken. In a medium sized pot filled with water. Add some salt and bring the water to a simmer. Add the chicken breast and cook until meat is cooked. (165F)
Once chicken is cooked, remove from water and allow to cool for 15 minutes before shredding. you can use two forks or your hands.
In a medium pot or an instant pot/slowcooker add the cream cheese, sour cream, heavy cream, shredded chicken, half the shredded cheese and the Gochu-Gang-Gang Hot Sauce. (Reserve some sauce for garnish) Stir well.
Allow to cook for 10-15 minutes to allow flavors to marry. Right before serving, fold in the remaining shredded cheese.
Put dip into serving platter. (optional: top with more cheese and bake in oven at 400F for 6-10 minutes.
Garnish dip with chopped scallions, sesame seeds, and gochugaru. Enjoy with Tortilla chips, as a sandwich or with a spoon.
