While I eat mostly vegan, I like to have a chicken taco option for taco night. This is a super simple recipe that doesn’t require a grill or other special equipment. Simply marinate the chicken thighs in a yogurt, sriracha, lime and cilantro mixture for 30 minutes and bake it in the oven - so easy! The key is to broil the chicken at the end of baking for a few minutes so you can get some of those nice charred spots on top. Then just slice and serve with your favorite tortillas (or lettuce wraps), cilantro, sliced radish, and the salsas and guac in this Collection. Enjoy!
