While I eat mostly vegan, I like to have a chicken taco option for taco night. This is a super simple recipe that doesn’t require a grill or other special equipment. Simply marinate the chicken thighs in a yogurt, sriracha, lime and cilantro mixture for 30 minutes and bake it in the oven - so easy! The key is to broil the chicken at the end of baking for a few minutes so you can get some of those nice charred spots on top.
