A super refreshing and light cocktail that takes advantage of citrus season with a Meyer lemon syrup and garnish.
Peel both Meyer lemons from end to end, making 1/2" wide, 1.5" long strips. Save 3 for the simple syrup.
Make the Meyer lemon syrup by adding the sugar, water, and lemon peels into a small saucepan. Bring up to a boil, then reduce and let simmer for 10 minutes.
In the meantime, juice the Meyer lemons into a pint container or sealable container. Add the equivalent amount of vodka, about 1/2 cup.
When ready to serve, add ice to the pint container (you can also use a shaker) and 2 tablespoons of the Meyer lemon syrup. Shake vigorously for 30 seconds, then pour into an ice filled glass. Top with sparkling water, then garnish with another lemon peel.
