I personally am not a big fan of salmon but Arctic char is a completely different story. A farm raised fish Arctic char does not have the same amount of fats as salmon which means the fish is a much more subtle flavor. Less fat however means that this fish can easily dry out if over cooked. The use of warm spices in the cabbage makes this dish perfect for that transitional time between summer and fall. That time when you are not quite ready for full on winter stews but not quite eating ceviche at the beach either. Enjoy this amazing fish for an amazing date night or even just a great weeknight meal. Yes, you can use salmon but if you have access to arctic char you will not be disappointed.
