I like to call this modern Italian cooking. taking techniques of traditional pasta making and combing with modern flavor profiles to create something new and exciting. You will need pasta equipment to make this recipe. I suggest a pasta attachment for your stand mixer.

Don't be put off by the time this recipe takes, the 7 days is just to cure the egg yolks. Feel free to leave that part out if you like.
