Beautiful and delicious! It doesn't get much better when it comes to soup. These days butternut squash is pretty readily available year round but when the temps start to cool the color and the flavor of the squash starts to deepen. A bright orange flesh starts to develop and the natural sweetness of the squash is at its peak. This soup is hearty enough to serve as a main and the leftovers are delicious.
