Everything has it's perfect amount of char. Asparagus is a perfect example of this. Adding a little bit of char to the asparagus creates a whole new flavor profile on this vegetable. Try to use large asparagus so the end result still has some crispness remaining. Being a pretty hardcore carnivore I added a pork fat hollandaise and crispy prosciutto, feel free to leave this off for a delicious vegan side.
