It does not get much sexier than this. Beautifully cooked loin of lamb coated in a bright herbaceous crust and served with charred eggplant puree, fava beans and a perfect red wine demi glace. Several years ago I was fortunate to travel to Dubai for a week long chef residency at a beautiful restaurant. This was my feature entree and it did not disappoint.
