This dish is a perfect example of how a dish is never truly completed, the base of this dish is a lobster ravioli that i have been cooking for years and so much of a favorite that the original recipe is featured in my cookbook “My Modern American Table”. This spin incorporates a squid ink pasta dough and instead of a lemon cream sauce as my original recipe featured I have created a unique lemon air using soy lecithin powder.
