Over the past 5-10 years ramen has developed somewhat of a cult following here in the U.S. and for good reason! it's delicious, packed with umami and makes you feel at home no matter where you find yourself. it makes sense that ramen would have its moment in the spotlight. If you are of a certain age like myself it is likely that you grew up eating cheap ramen noodles out of a little square package. Just like people look for the toys of their childhood we search for the foods of nostalgia as well.

This recipe features scallops but substitutions are easy here. Try shrimp, beef or even chicken. Most of the time in this recipe is inactive while cooking the broth. I show you how to make your own ramen noodles in the recipe but packaged will work just as well.
