This may be a little different than gnocchi you are familiar with. More often than not you will find potato as the main ingredient in gnocchi, except in Paris. These Parisan gnocchi, composed of flour egg and cheese are so soft and pillowy you are certain to become hooked. These gnocchi are very soft so I like to sear them after boiling to develop a delicious crust for a little texture.
