Risotto is one of my favorite things to make, in fact I have traveled all over the world sharing some of my risotto recipes. This one is one of my top five for sure, the vibrancy the asparagus brings to the dish is something special and most importantly this risotto gives you a way to use your asparagus scraps in a creative way. Feel free to substitute the pork for chicken, fish or even shrimp for a spectacular spin off.
