I love a one pan chicken and rice dish. Clean up is a breeze and everything cooks together leaving you time to do other things besides cook.

Couple notes:

Bone in, skin on chicken thighs are best here since the skin will get nice and crispy and the meat stays moist.

You can use any type of olive that you have and don't skip the orange - it adds an unexpected brightness to the dish.
