A great Caesar Salad is a great thing indeed. And because of it's perfect simplicity, rarely do any restaurants have them as it should be. Add anything to it you want (as in roast chicken), but get the basic recipe right. And make them just before they are to be served, and don’t pre-make the dressing. The salad's greatness comes from the fresh melding of its simple and best quality ingredients.
Now that you can buy packages of washed small Romaine lettuces, the salad is even easier and the presentation more striking.
I think that perfect little croutons are very difficult to make and difficult to judge what happens to them when made in advance. I prefer to make garlic toasts or grilled bread rubbed with a fresh garlic clove and serve them on the side.
