This pizza checks two very important pizza night boxes: 1) it's vegetarian, and 2) it's a white pizza. Like the other pizzas in this collection, it can be on the table in under 30 minutes. The olives really balance out the bitter broccoli rabe, and the garlicy olive oil base before you top the pizza with veggies & cheese adds an amazing depth of flavor. All you need is some store bought pizza dough (at room temp), and you're ready for your new favorite weeknight pizza dinner!
The recipe calls for one bunch of broccoli rabe. If your bunch is particularly big, you may not end up using all of it to top your pizza. The sautéed broccoli rabe is incredible tossed with pasta, served with a poached egg, or added to a frittata if you have a little more than you need for one pizza!
