Another favorite of pizza night - Brussels sprouts & bacon! An incredible combo, here in pizza form. I like using thick slab bacon that I dice into ~1/4 inch cubes. You start by crisping up the bacon in a pan on the stove, and once they are starting to get crispy - remove them to a bowl and saute the sliced Brussels sprouts in the rendered bacon fat. Just for two minutes to get them a little soft. Top your dough with cheese, the pre-cooked bacon & Brussels, and pop it in the oven for 8-10 minutes. It's so good, it might become your new favorite pizza!

Ingredients

store bought pizza dough, at room temperature
olive oil
slab bacon, cut into 1/4 inch cubes
thinly sliced brussels sprouts
fresh ground black pepper, to taste
kosher salt, plus more to taste
olive oil
garlic, peeled & minced
shredded mozzarella cheese, part skim or low moisture
grated parmesan cheese
