This Flourless Red Wine Chocolate Cake is perfect for any special occasion. It's dramatic yet effortless, decadent and rich. This easy and elegant cake with its crown of whipped cream and red wine roasted strawberries is my absolute favorite.

Ingredients

Red wine roasted strawberries

strawberries
halved

red wine

tablespoon
granulated sugar
or honey, maple syrup

sprigs
fresh thyme
Whipped Cream

cup
heavy cream

tablespoon
powdered sugar

Directions

Flourless Red Wine Chocolate Cake
Step 1

Preheat oven to 350 degrees.

Step 2

Add the chocolate and butter to a saucepan on medium-low heat and melt, stirring occasionally to help them dissolve.

Step 3

Add the eggs and sugar to a bowl and using an electric mixer mix until light and foamy.

Step 4

With the mixer running pour in the melted chocolate and butter, mixing to completely incorporate and combine.

Step 5

Mix in the remaining ingredients.

Step 6

Pour the batter into a 9" round cake pan. Bake for 30-40 minutes until set.

Step 7

Allow to cool completely before topping with whipped cream and roasted strawberries.

Step 8

Top with whipped cream and red wine roasted strawberries.

Red Wine Roasted Strawberries
Step 1

Preheat oven to 400 degrees.

Step 2

Toss the ingredients together to combine.

Step 3

Spread on a baking sheet or in a baking dish.

Step 4

Roast for 15-20 minutes until the strawberries are soft and the juices thick and bubbly, stirring once halfway through.

Whipped Cream
Step 1

While the cake is baking whip together the heavy cream and powdered sugar until soft peaks form.
