Horchata!

This is a Mexican-Style Version. Traditionally the version in Spain is made using Tiger Nuts but the most well known version is from Mexico made with Rice.

Horchata is also a drink that is commonly Dairy-Free so it's suited for most lifestyles. Horchata is best served well chilled over Ice. It's also nice to add Spiced Rum for a kick! It's rich, creamy and delicious. Enjoy!

Ingredients

jasmine rice

slivered almonds

cinnamon sticks

water
this water will be for soaking the rice

water
this portion will be added when blending

teaspoons
vanilla extract

almond milk
or you can use an alternative milk of your choice

ounces
coconut sweetened condensed milk
the brand of sweetened condensed coconut milk is from Nature's Charm

granulated sugar
add more or less sugar to your preference

ground cinnamon

Directions

Step 1

In a dry pan lightly toast the rice, almonds, and cinnamon sticks. The almonds should be very lightly brown and fragrant.

Step 2

Add the contents to a container and cover with the 4 Cups of Water.

Step 3

Let this sit in your refrigerator at least 6 hours and up to overnight.

Step 4

Add all the contents to a blender.

Step 5

Add in the remaining water. Blend this for a couple of minutes on high until the rice is well pulverized.

Step 6

Pour this through a strainer.

Step 7

Add the strained rice milk back into the blender.

Step 8

Add the remaining ingredients and blend to combine. Strain this once more time through cheesecloth is you have it. Adjust the sweetness if necessary.

Step 9

Shake the Horchata well before serving as sediments can settle to the bottom. Serve chilled over ice.
