Korean Inspired Tuna Rice Bowl

Prep ahead: Make rice the day before

This is a simple dish to create with little prep time - the perfect lunch during the work week if you're WFH IMO.

The secret is using a special can of tuna from H Mart by Dong Won (they may carry it at other asian specialty markets too).

Ingredients

dong won hot pepper tuna
The tuna comes in Hot Pepper or Kimchi. I prefer the Hot Pepper, but both are really good.

Use your favorite type
as needed
kewpie mayo
Decide how much to add per your preference
as needed
sriracha
Decide how much to add per your preference

dried seaweed snacks
1 pack per bowl

teaspoons
ikura
1 teaspoon per bowl

spinach
Split steamed amount evenly between both bowls

teaspoon
sesame seed oil

avocado
as needed
pickled ginger

furikake
as needed
microgreens
as needed
sesame seeds

Directions

Step 1

Reheat rice in the microwave

Step 2

Mix rice, tuna, kewpie mayo, and sriracha in a bowl

Step 3

Once tuna rice is mixed, split between two bowls and begin prepping your bowl

Step 4

Quick Steam Spinach: Add a couple of tablespoons of water to a microwaveable bowl with the spinach and heat for 30-45 seconds. Drain any excess water and then add Sesame Oil and Sesame Seeds. Set aside

Step 5

Add the additional ingredients (Ikura, Spinach, Seaweed Snack, Avocado, Microgreens, and Pickled Ginger)

Step 6

Once everything is put together, sprinkle a generous amount of furikake over your dish and enjoy!
