This is my go-to appetizer for any get-together. I also love whipping up a double batch because it makes a great snack all week long, or a break from the lunchbox sandwich for the kids.

Blender

Ingredients

chickpeas
Rinsed and drained
11/2
tablespoons
tahini
Optional, but I love the earthy tones it adds!
1/2
cup
good olive oil
1/4
cup
room temperature water
1
sprig
fresh herbs
Parsley, rosemary, pinch of za'atar will do!
1
lemon
juiced
salt and pepper
to taste

Directions

Step 1

Add all ingredients to the blender. Blend on high until smooth. Top with extra olive oil and course salt.

Step 2

Serve with carrot or celery slices or pita chips. Or all three!
