This is the Spring salad you need in your life! Seasonal produce like crisp, slightly spicy radishes, crunchy and sweet sugar snap peas, peppery arugula, and a touch of fresh mint go perfectly with a punchy lemon shallot vinaigrette. A very non-fussy salad, it's a cinch to throw together and sure to become a crowd favorite!
Combine the lemon juice, shallot, mustard, kosher salt, and black pepper in a large glass jar or measuring cup. Whisk to combine. Slowly stream in the olive oil, while continuing to whisk, to emulsify the vinaigrette.
note: this will make a decent amount of vinaigrette. You may not need it all, dress the salad to your liking and reserve the remaining vinaigrette.
In a large bowl, toss together the arugula, radishes, snap peas, and mint. Drizzle the vinaigrette (amount of your liking) over the salad and toss to combine. Finish with a pinch of flaky sea salt. Serve immediately.
*This can be assembled a few hours in advance, just wait to toss the salad with the vinaigrette until right before serving
