Cooking fish in parchment paper is a fool proof way to get a quick, healthy dinner on the table - without making your whole kitchen smell like fish! When you cook fish this way, you're steaming it (ie the healthy!), and everything is contained in the parchment packet (ie no mess pan frying fish on the stove!).

If you're making this dish for two, you could do it all in one piece of parchment. Otherwise, you can portion out the fish and make individual packets, which is what I like to do if I'm making this dinner for friends at a dinner party - that way everyone gets their own little dinner inside a parchment packet.

I find that when I add in as many vegetables to the packet as I do here, I don't really need another side dish. That said, a few slices of really good bread go extremely well with this dinner, because you can dip the bread in all the delicious juice in side the parchment. (If you're worried about having leftover bread, there's another recipe this week that will use the rest of it to make homemade croutons - Kale Caesar Salad with Sautéed Shrimp & Tahini Dressing!)

This dish is gluten free (just use your favorite gluten free bread if you follow a gluten free diet) and very low carb (minus the bread of course). I find that butter adds so much flavor inside the packet, but if you're dairy free you can add an extra tablespoon of olive oil and an ice cube in its place!

salmon, ~1 inch thick (you can do 2 6 oz fillets vs 1 large)
cherry tomatoes
roughly chopped kalamata olives
basil, roughly chopped
snap peas (12-15 snap peas, ~a large handful)
olive oil, divided
unsalted butter
kosher salt
black pepper
country or sourdough bread, cut in slices to serve (optional)
