Coconut curry steamed salmon is flavorful, nutrition packed, and SO GOOD. I love these one pot salmon dinners, and the broccolini, tomatoes, and purple sweet potato make it very well balanced. It might be my favorite flavor combo yet, and did I mention it comes together in under 30 minutes?! I like to pair this dish with rice, and you've got yourself a healthy, easy weeknight dinner.
A few quick notes:
- there does not need to be water under the parchment paper. The coconut milk is the liquid that steams the fish.
- I haven't ever had a scenario where my parchment paper burned. There should be enough moisture from the liquid to soften the parchment paper. Be sure to cook on medium high heat, then adjust the heat to medium for the second half of cooking.
- Feel free to substitute other vegetables - I've tried this with Napa cabbage, bell peppers, really anything you like can go in here :)
