This Chicken, Hummus & Mediterranean Chopped Salad bowl is everything I want in a dinner, especially during the warmer weather months! And best of all, every part of this dish can be prepped / cooked in advance and assembled when you're ready to eat (even prepped a day or two ahead!).

I love making my own hummus - it's super easy if you have a food processor or a good blender (you literally dump everything in and turn it on). That said, if you're short on time or don't have a food processor or blender, you can absolutely use store bought hummus! The way to dress it up a little is to drizzle a little olive oil and paprika or za'atar spice blend on top before adding the chicken and the chopped salad.

This entire meal is gluten free, and can be dairy free if you skip the feta cheese. While the chicken is a main feature of this dinner, you could absolutely skip it to keep it vegetarian, and you could also use the same chicken spice mixture on sweet potatoes and roast them in the oven if you want to add a little something else to

Ingredients

For the Chicken
boneless skinless chicken breast
olive oil
paprika
ground cumin
dried oregano
garlic powder
kosher salt
fresh ground black pepper
neutral oil (like vegetable or canola oil)
For the Hummus
can of chickpeas, drained & rinsed
garlic, peeled (if they are huge cloves, you can just use 1)
kosher salt, plus more to taste
small lemon, juiced
tahini
olive oil
For the Salad
persian cucumbers, diced
cherry tomatoes, halved
kalamata olives, chopped
chopped flat leaf parsley (~1/4 bunch)
chopped cilantro (~1/4 bunch)
feta cheese, crumbled or chopped
olive oil
