Miso Steamed Salmon with Smashed Cucumber and Tomato Salad. This summertime version of steamed salmon includes a simple miso sesame sauce cooked with salmon, shallots, and garlic. Served alongside a delicious and crunchy cucumber tomato salad, this meal comes together in less than 30 minutes and is healthy, delicious and SO refreshing.

A few tips below, and hope you all love this recipe!

- Thin skinned cucumbers are key to this delicious salad. They are so much more tender than the regular cucumber, and go great with this preparation method. You can salt the cucumbers first if you want, but I find that you don't need this step for these thin skinned Persian cucumbers.

- There is no need to add water to the pan. The fish steams inside the parchment paper with cooking wine or water.

- If you turn the stove to medium when you begin cooking, you shouldn't have any issues with the parchment burning. Every stove is different though, but this shouldn't be an issue if you add the wine or water inside the parchment paper and heat everything gently on medium.
