- Thin skinned cucumbers are key to this delicious salad. They are so much more tender than the regular cucumber, and go great with this preparation method. You can salt the cucumbers first if you want, but I find that you don't need this step for these thin skinned Persian cucumbers.
- There is no need to add water to the pan. The fish steams inside the parchment paper with cooking wine or water.
- If you turn the stove to medium when you begin cooking, you shouldn't have any issues with the parchment burning. Every stove is different though, but this shouldn't be an issue if you add the wine or water inside the parchment paper and heat everything gently on medium.
