Warm Zucchini Salad with Pasta, Crispy Breadcrumbs, and Burrata is my pasta of choice for the summer! It's SO simple to make, and feels light, flavorful, and delicious. Did I mention it's vegetarian and great for meatless Monday? :)
A couple tips below, and I think you all will really love this one!
- add the garlic and red pepper flake to the oil, then turn the heat on medium low to let the flavors infuse without the aromatics burning. let infuse for 45 seconds, or until you begin to see the garlic slightly begin to brown
- add the hot oil directly over the sliced zucchini to let it cook slightly. I love this texture!
