These dumplings are beautiful, delicious, and perfect to take advantage of all the sweet corn in season during the summer.

I made a beet root wrapper with flour and beet juice, but feel free to simplify things and just use store bought dumpling wrappers if you prefer. I LOVE this filling, and hope you all do as well.
