Nature's beauty right here - this balsamic stone fruit, tomato, and burrata salad is one of my all time favorite dishes, and is the BEST when stone fruit (nectarines, peaches, apricots, plums, cherries) are in season from July - September.

This dish comes together in less than 15 minutes, and the key is using tomatoes and fruit that are in their prime. Here are a couple tips:

- Deliciously sweet fruit will exude an incredibly sweet smell to them. When you're at the market or about to pick the stone fruit on your table, it's at it's prime when you smell the fruit and it smells really sweet.

- I like to use heirloom tomatoes, or farmers market / homegrown tomatoes. They should be red on the inside and will also be very naturally sweet.

large white nectarines
heirloom tomatoes
burrata
balsamic glaze
maldon salt
extra virgin olive oil
basil
