This dinner is so delicious and tastes like you spent hours making it, even though it can be on the table in 30 minutes. I always loved sesame noodles growing up, so this is my fun take on that flavor profile. I use soba noodles for this recipe, which you can find at most major grocery stores. If you have trouble finding it, you could sub any other noodle you prefer, such as rice noodles or even spaghetti, just make sure you follow the cooking instructions on the packaging (soba Cookes VERY fast, other noodles may take a little longer).
I love the salmon with this dish, and it roasts along side the mushrooms and broccoli making it a super easy prep and clean up. If you are vegetarian or don't love salmon, you could double up the vegetables, or sub in tofu! This meal is dairy free, and gluten free if you use tamari instead of soy sauce. Serves 2 for dinner.
