This dinner was a happy discovery one night when I had a piece of fish in the fridge that I needed to use, and a handful of other odds and ends. This dish is SO simple, yet incredibly flavorful - and it's a one pan dish, making clean up super simple. It takes about 5 minutes to prep, and then you put it in the oven for 20 -25 minutes. During that time you can set the table, clean up the kitchen, and pour yourself a glass of wine.
This recipe would also make for an amazing dinner party dish - you could assemble it before your guests arrive and keep it in the fridge until you're ready to eat, then just toss the whole thing in the oven.
I love to serve the roasted vegetables from this dish over a swoosh of good hummus alongside the fish, which you'll see in the recipe, but if you prefer to keep it simple it's delicious without it, too. And while I use salmon in this version, I've made it with halibut, and you could sub your favorite thicker white fish. Just note that if you use a much thinner cut of fish like snapper, flounder, etc it will cook a little faster than halibut or a thick piece of salmon will.
Serves 2 for dinner, though it scales beautifully to feed any number of people. Gluten free, and dairy free optional if you skip the feta.
