This is most definitely my new favorite way to cook chicken for one!

Similar to my one pan steamed salmon, this dish only requires one pan, is made in less than 30 minutes, and is SO good. I love this dish for an easy weeknight dinner with super minimal cleanup. Serve with rice, and enjoy.

I made this specific recipe with already marinated spiced chicken, but this recipe can be scaled accordingly (if you're using more chicken, cook for the same amount of time, but check the temperature after 7 minutes, and cook longer, checking every 2 minutes).
