This is one of the first dinners using my marinated ginger scallion chicken. I like to prep ahead by marinating the chicken and pickling the red onions on Sunday.

Once it's a weeknight evening, this dish will come together in less than 20 minutes. The combination of flavors, textures, and those pickled red onions (!!) is delicious, and I know you all will love this recipe.
