This pasta is a favorite in our house - it uses mostly pantry staples and comes together in just 20 minutes, and it will taste like you're eating at your favorite neighborhood Italian spot! I like to use packaged diced pancetta (and often keep a few in my fridge or freezer to make this dish when we are in the mood, which is often). From there you just need a can of crushed tomato, dried bucatini (sub spaghetti if you can't find bucatini), red onion, chili flake, garlic and grated pecorino cheese.
This pasta has a good amount of heat on it, so if you're really sensitive to spice you can halve the chili flake to start and add more as you want. You can sub GF pasta to keep this dish gluten free, and you can skip the cheese on top to serve to keep it dairy free. Serves 2 for dinner, or 4 as an appetizer / first course.
