This is simple (vegetarian) comfort food at its finest. Uses mostly pantry items (any white bean works) and that crunchy, crispy cheese on top is the best part.

I use fresh mozzarella but you could also sub ricotta or burrata. You can also make this dish gluten free by using GF panko instead of regular panko.
