This is a super quick, sub 20 minute dinner that's packed with flavor and also very healthy. The salmon gets seasoned with some olive oil, salt and pepper, then topped with sliced orange (I like to use a blood orange if I can find one at the store) and some fresh thyme. It roasts for ~10-12 minutes, which is the perfect amount of time to prep and quickly sauté up some broccolini.

You can Roast the broccolini with the salmon on the same sheet tray if you prefer, but I've been into sauted broccolini recently - it stays super green and doesn't get too dried out vs roasting.

The entire dish is gluten and dairy free!

Serves 2, but scales up really easily
