This is my vegan version of a tuna salad. You can serve it on its own, in a lettuce cup, or over a bed of mixed greens with crumbled sheets of nori. You can also add in some optional chia seeds or hemp hearts for a little extra nutrients.
You can mash the chickpeas with the back of a fork in a mixing bowl or pulse everything a few times in a food processor to get your desired consistency.
