A simple chicken salsa verde is one of my favorite things to make once a week and use in a variety of ways. This way happens to be on repeat once a week these days - all you need is a can of refried beans (my favorite is Amy's refried black beans), the leftover (or freshly cooked) chicken salsa verde, an avocado, some cotija cheese, an avocado and some cilantro.
I usually find tostadas at my weekly farmers market or in the grocery store near tortilla chips or hard taco shells, depending on the store. If you can't find them, you can use hard taco shells and fill them with the ingredients like a taco, or use tortilla chips to scoop up the beans, chicken, and all the delicious toppings. You could of course fry your own tostadas, but I can't be bothered with that on a busy weeknight personally.
The key to these tostadas is to try not to overload them with the toppings, otherwise they will become soggy or too heavy and difficult to eat. You can eat them with your hands or a knife and fork.
Serves 4-6 (I usually make 2 per person).
