Versunkener Apfelkuchen is a traditional German dessert that is also known as sunken apple cake. It is a simple and delicious cake that is made with fresh apples and a simple batter that rises up and bakes around the apples. The name “versunkener” means “sunken” in German, which refers to the way the apples sink into the batter as the cake bakes.
This cake is often served with whipped cream on top and is perfect for any time of year. It is also a popular dessert to serve during Oktoberfest celebrations in Germany.
Preheat oven to 180 degrees or 160 degrees fan-forced.
Butter a round tin cake (26cm diameter).
Add butter, sugar, vanilla extract, cinnamon, lemon juice and salt in a mixing bowl, and beat until pale and fluffy.
Add eggs and beat into the mix.
Add flour and beat into the mix.
Spead the dough into the prepared cake tin.
Peel, quarter and remove the core. Slice the quarters lengthwise (don’t cut through).
Press the quartered apple – flat side down - into the dough.
Bake the cake for approx. 40 min.
Let the cake rest. Serve sprinkled with icing sugar (and some whipped cream).
