This is truly the easiest recipe to make, it can be on your table for dinner or lunch in 15 minutes flat! I recently had a nostalgic craving for the kind of taco night we had all the time growing up - ground beef with taco seasoning, shredded lettuce, diced tomatoes, and cheddar cheese. I didn't have any hard shell tacos otherwise I would have used those here - but your favorite tortilla works really well (flour / corn / gluten free), as long as you give them a quick char on the stove.
For this recipe I did 50/50 ground beef and ground pork, and the result was incredible! I make my own taco seasoning - you can of course grab your favorite packet at the store, but they are typically loaded with other ingredients and things we can't pronounce, so I prefer to do my own - see the recipe.
From their top with your favorite toppings! Shredded cheddar (or other cheese of choice), chopped fresh tomatoes, shredded lettuce, diced or sliced avocado if you like, and / or sour cream if that's your thing! If you don't like or can't eat beef or pork, you could sub ground turkey, ground chicken, or use a plant based "ground meat."
The meat keeps really well for a day or two for leftovers, or to use on a quinoa or rice bowl, or a taco salad with all the other fixings.
