A perfectly cooked steak and horseradish cream sauce is one of my favorite dishes to make year round. The combination is so good, and it's a real crowd pleaser. This recipe scales really well whether you're cooking for 1 person or 10 - leftover cream keeps in the fridge for a week and takes literally 2 minutes to make.
The steak is super simple - you sear it for 3 minutes on one side in a super hot cast iron pan, then flip it and sear the other side for 3 minutes, turn it on it's side, then you're done. I like using a New York Strip Steak for this dish - if you use another cut of meat just note the cook time might be very different. If you don't have a meat thermometer it's worth investing in one, it makes cooking proteins so much easier.
If you're making this for a dinner party I would add a simple green salad with a tangy lemon dressing, a simple roast potato or roast honey nut squash, and you're good to go!
