This recipe uses a shawarma spice blend in the chicken marinade to amp up the flavor. This dish is super healthy, fresh, and quick to make! The salad uses some great fall ingredients like thinly sliced apple and toasted pepitas, plus some crumbled salty feta, avocado, and chopped chives. It's a great base salad to sub your favorite crunchy items, herbs, fruit and / or cheese. Cucumbers or thinly sliced radishes would also be a great addition here.
I cook this chicken on a grill, but you can use a grill pan or a cast iron pan indoors if you don't have a grill (or if your weather isn't cooperating!).
On its own the salad is vegetarian, and the whole dish is gluten free, and dairy free optional (if you skip the cheese or use a DF cheese). Serves 4.
