No Christmas market in Germany is without the sweet smell of slightly charred almonds or peanuts. Making them at home is easy as long as you stir regularly and watch the sugar from prevent burning.

Ingredients

water

granulated sugar

teaspoon
kosher salt

almonds
Or peanuts

tablespoon
all spice
Mixed spice. Lebkuchengewürz or combine 1 tsp All spice, 1 tbsp vanilla essence and 1 tbsp cinnamon.

Directions

Step 1

Using a non-stick pan, bring water, sugar, salt and spices to boil until sugar is dissolved.

Step 2

Add almonds and reduce the heat to medium.

Step 3

Regularly stir the almonds for around 20-25 minutes. Sugar will begin to turn darker and thicker before finally crystalizing.

Step 4

Turn the heat down to low to prevent burning and continue stirring until all almonds have a rough coating around them.

Step 5

Spread the almonds evenly on baking paper to cool down.
