This is one of my go-to dinner party recipes. You can prep it as early as the day before, then put it in a baking dish in the oven for 50-60 minutes while you spend time with your guests, and / or prep side dishes. I like to serve this with a simple arugula or winter greens salad, lemon parmesan risotto, or roast baby potatoes with parmesan. It serves 6-8, with leftovers depending on how hungry people are.
I've also made a version of this dish for vegetarian friends using cauliflower in place of the chicken - it's delicious!
There are two ways you can do this - leave the chicken breasts and thighs whole (or cut the breasts in half if they are large), or cut the chicken into smaller 2 inch pieces before you add it to the marinade mixture - it will cook much faster (~30-35 minutes) and will be easier for people to eat at a party.
