This is the ultimate cold weather comfort food. It's best made when you have at least an hour to let it simmer, but you could cook it for 30-45 minutes total and it's still delicious, making it great for a weeknight too. It serves 6-8, and even if I'm just making it for 2 people I cook the full amount because the leftover sauce saves for days in the fridge and a month in the freezer - future you will be so thankful! Just cook off new pasta whenever you want to eat the leftover sauce (don't freeze it together with cooked pasta).

The sauce itself is gluten free (and to keep the dish gluten free you can use your GF pasta of choice). I use a food processor to get the vegetables really finely minced which gives the sauce a smoother texture, but you can absolutely finely chop the vegetables by hand if you don't have one.

I have another version of bolognese using ground pork, veal and pancetta. This one is simplified using ground turkey, which is a bit leaner. If you have the choice between ground turkey breast or thigh, go for the ground thigh meat, it has more flavor.
